Connemara.. its People, its Land and its Shores..
The Chef’s Table draws its inspiration from Connemara – its local farmers and growers of fresh produce, its wild and rugged landscape, and last but not least, its seaboard along the west of Ireland.
Excellent produce creates excellent food, so it’s only natural for Stefan to bring all this fine, locally sourced produce to his table when preparing his menu.
“I am loving working with local farmers and suppliers to weave their produce throughout our menus.” – Executive Head Chef, Stefan Matz
From the finest Connemara Lamb to the best of locally farmed Killary Mussels and everything in between, The Chef’s Table celebrates sustainability along Ireland’s Wild Atlantic Way.
For many centuries, poets, writers, painters and many more have drawn inspiration from the land to enrich their works of art and literature. At The Chef’s Table, our chefs also have this same connection, love and respect for the land, which is evident in their work. Each dish tells a story and that is what makes the food experience so unique.
“Living in Connemara has a huge impact on my work. The area is where I get my inspiration from. My pine jelly, I got the idea for that when I was walking around seeing pines everywhere, I had to use them! During the Summer I use blackberries and I’m always cooking with local flowers – I’m lucky to live somewhere along the Wild Atlantic Way that offers so much great organic produce.” – Head Pastry Chef, Elena Martinez Otero
