About the Chef
EXECUTIVE HEAD CHEF: JJ O’MALLEY
JJ O’Malley started his culinary career at 16 working in his brother’s restaurant in Wales. Having decided a career in the kitchen was for him, JJ returned to Ireland where he worked in the busy and highly-regarded Castlecourt Hotel, Westport whilst attending college in GMIT Galway. From there JJ moved to KC Blakes, Galway as a young, Commis Chef. Under the guidance of owner and talented Head Chef John Casey and his father Bernie Casey, in the space of only a few short years JJ advanced to Sous Chef. From there JJ worked in The Aubergine Gallery Café, Longford and the Artisan Restaurant, Galway. Returning to Westport in 2014 JJ took on the role of Sous Chef at The Atlantic Coast Hotel and two years later was appointed Head Chef of the newly opened May’s Bistro at The Castlecourt Hotel.
JJ joined Delphi Resort as Head Chef in 2017 with the challenge of delivering an excellent dining experience throughout the 4* Resort’s Restaurant, Bar and 200-bed Hostel. Whether catering for ravenous outdoor adventurers, relaxed spa-goers or wedding parties with a difference, over the past number of years JJ and his team have successfully grown the reputation and quality of the dining experience at Delphi Resort. JJ brings a wealth of experience to his role and strongly believes in the importance of working with local suppliers to ensure the offering at Delphi Resort reflects the very best of locally-produced, seasonal and delicious produce the region has to offer.
A ‘homegrown’ Chef hailing from Westport, JJ is delighted to be back working in his native Mayo. He lives with his wife and three children in Ballintubber and when he’s not cooking you’ll likely find him spending time outdoors helping out at his kids’ local GAA club.
